In case you haven’t noticed – it’s hot outside! Summer temps are at record highs and the thought of cooking anything, let alone using heat to do said cooking, seems unbearable. So instead of firing up your oven or slaving over a stove all afternoon, whip up some no-bake summer treats. We’ve discovered a few delectable goodies that don’t require the use of the oven, microwave or even toaster (scoring more points towards minimizing your carbon footprint), and these recipes barely require any cooking or preparation (scoring more points for summertime laziness!).
Five Minute Frozen Fruit Mousse:
Mousse is often a fancy dessert reserved for fancy meals in fancy restaurants. This recipe, however, is simple to make, refreshing for a hot afternoon and doesn’t come with a fancy dinner bill. A quick mix of frozen fruit, sugar and egg whites are all you need to make this delightful treat that everyone will love.
No-Bake Chocolate Cheesecake:
Is there anything more perfect than cheesecake? A no-bake chocolate cheesecake, of course! We’re loving this super easy and super fast recipe that delivers chocolate cheesecake yumminess without heating up your whole house. We admit you’ll need a microwave for this one (for only a minute or so), but your mixer and refrigerator do the majority of the work and prep time is only 8 minutes! We say yes! No-Bake Girl Scout Thin Mint Cookie Truffles:
We love Girl Scout Cookie season! Is there anyone who doesn’t?! So it’s only fitting (and fair to the masses who wait all year for the Girl Scout Cookie craze to begin) to ensure that Girl Scout Cookies are shown plenty of year-round love by putting them front and center in these no-bake truffles. If you can’t find these fast-disappearing chocolate mint cookies or don’t have them stashed away in your freezer, you can buy similar ones at your grocery store year-round.
Cinnamon Sugar Chocolate Pretzels:
If you’re like most people, you appreciate the goodness and balance of foods that incorporate both salty and sweet tastes. So, like most people, you’ll love this five-minute confection of cinnamon, sugar, chocolate and pretzels. We suggest making a few big batches and keeping them in your freezer through fall for a cool, finger-licking delicious snack.
